Spaghetti with garlic, olive oil and cayenne pepper
Spaghetti aglio olio e peperoncino
There’s just four-ish ingredients in the dish known as Spaghetti aglio olio e peperoncino or spaghetti with garlic, olive oil and cayenne pepper.
4 cloves of garlic
100 ml olive oil
1/2 teaspoon cayenne pepper
20 ml water
180 ml spaghetti
Cook spaghetti according to directions on packet
Meanwhile peel and blanch (place in boiling water for 30 sec, drain then place in new hot water until boiling) the garlic 4 times.
Blend the garlic, oil and water and strain mixture into a warm pan
Add parsley and cayenne to sauce
Place spaghetti directly into pan without draining
Agitate mixture until spaghetti absorbs sauce
Plate by twirling spaghetti on plate with tongs and pour excess sauce over top
