Saganaki with Passionfruit

Grilled cheeses like saganaki always go well with something sweet so in this recipe passion fruit is used.
The thyme gives it a hit of savoury-ness and the sherry vinegar / capers a nice hit of acid.
All in all this was a hit!

Ingredients
2 pieces of kefalograviera cheese (saganaki)
2 passion fruit
2 tablespoon spoon sherry vinegar
1 teaspoon of capers
small bunch of thyme
1/2 cup flour
1 cup of olive oil
Directions
Cover the saganaki in the flour and shake of excess.
Pour oil in a pan on medium/high add the thyme *it will spit. Place cheese also in pan and flip over once browned.
Remove from pan once both sides are brown and wipe of excess oil by patting with a paper towel.
To serve place cheese on a plate, followed by the thyme from the pan, the sherry vinegar, capers, the halved passionfruit and the honey. Serve immediately.
Recipe Note
You could add some Ouzo to do a flambe! Once cheese is nearly cooked remove pan from the flame, add 10 ml of ouzo to the pan. Reintroduce pan to the flame and watch the show. You may need to angle the pan to set it alight. Be careful.
