Roast Pumpkin Pasta

Ingredients
220g dried Pasta
1/4 of a pumpkin
2 garlic bulbs
Thyme
Garlic
Chilli flakes to taste
Handful of toasted walnuts
1 block of merediths goat feta
olive oil
salt
Directions
Preheat oven to 200 degrees celcius
Cut pumpkin into large pieces, and place on oven tray with the garlic bulbs. Coat well in oil.
Bake in oven for 35 minutes.
Remove and let cool for 15 minutes.
Add the pumpkin, the garlic and a ladle of pasta water.
Blitz away and set aside
Toast the walnuts in a non stick pan for a few minutes
Add the pumpkin puree to a pan, loosen it up with pasta water if needed. Add the pasta once al dente and coat in the sauce.
You may need to keep adding pasta water until the consistence is perfect.
Top the pasta with feta, thyme and the walnuts
