Roast Cauliflower with green tahini

I seriously nearly walked away from this one. If I wasn’t uploading live stories of the cook I probably would have. But I was glad I didn’t.
Ingredients
1 head of cauliflower
200ml tahini
1 bunch Parsley
1 bunch Corriander
1 bunch chives
1 bunch dill
Salt
Lemon juice
Cumin
Fenugreek
Olive oil
Garlic powder
Directions
Cut head of cauliflower in half and cover in olive oil and 1 tsp of garlic powder. Place in oven at 180 C for 50 minutes
If using store bought tahini, add to food processor with 1 cup of the parsley, dill and corriander, juice from a lemon, salt, and if needed some water.
If making the tahini, lightly toast the sessame seeds before adding to the processor, first blitz into a rough paste before slowly adding oil until happy weith the consistency.
To plate, make a bed of the tahini, followed by finely chopped chives, dill and parsley, the cauliflower and grated parmesan cheese on top.
