Prawn Head Spaghetti

A luxurious, rich and kind of easy pasta to impress!
Ingredients
140 g Spaghetti
6 large cooked prawns
1/2 a lemon
1 tsp salt
1 tsp white pepper
2 cups cold water
4 parsley stems
1 clove garlic
50g butter
Directions
Process prawns by discarding the eyes
Remove the head, shell and tail and set aside
remove the vein and discard
At this point you can eat the prawns or set aside for something else
Combine the heads, shells, tails, lemon juice, salt, pepper and water in a food processor and blitz until it's almost a porridge consistency
Begin cooking the spaghetti in boiling salted water
Stain prawn mix into a pan over medium/high to reduce, adding the parsley and garlic
Once spaghetti is cooked about 75% of the way through using tongs add it straight into the prawn reduction no need to strain
Add in butter, make sure to coat all the spaghetti
Finish cooking the spaghetti like a risotto, adding a small amount of pasta water at a time until the spaghetti is cooked. This needs to be over a fairly high heat to make sure the sauce is bubbling and the spaghetti is absorbing it
