Super fun to make and they look so much like beans, with a bitey texture that will surprise you.

Ingredients
200 g plain flour
130 g spinach
Pinch of salt
40 g toasted almonds
1 1/2 cups basil
1 medium size garlic clove
60 g grated parmesan
Juice of half a lemon plus zest
5 tablespoon olive oil
Ricotta cheese

Directions
In a food processor combine ingredients until a ball starts forming around 4 minutes. You may need to add water or flour as needed
Once ready tip ingredients onto floured table and knead for 10 minutes, cover with cling wrap and set aside in the fridge for an hour
Meanwhile make the pesto by combining all the ingredients in a food processor adding the almonds last, store in an airtight container until use
After one hour roll out dough ball to about 5mm thick. Then cut in 5mm wide strips.
Roll each strip in your hand to form the thick spaghetti shape 'pici'
Cook the pasta in boiling salted water
Meanwhile heat a pan on low and add the pesto
Once the pici is nearly cooked add to pan with pesto to finish cooking
