Easy Moules Frites

Ingredients
1kg mussels, cleaned and debearded
50g butter
8 small sprigs of thyme
2 bay leaves
1 shallot, finely diced
2 garlic cloves, thinly sliced
1 cup parsley, chopped
2 cups white wine
Veg oil for the fries
2 handfuls of fries
Directions
Tie the thyme and bay leaves into a bouquet garni, fancy name for together
Place enough veg oil in a small pot to fill up half way and slowly bring up to temp (180C)
Meanwhile inspect the mussels and discard of any that are cracked, or dead. You can check by gently tapping to see if they close up, if they don’t chuck them out
Melt butter in pot and add the shallots, garlic, herbs and white wine. Simmer until oil is ready for fries.
Add the mussels to the pot and cover and then immediately add the fries to the oil.
The fries will be done in 5 minutes or slightly earlier, remove from the oil onto a wire rack or paper towel, toss in salt and set aside.
Inspect mussels to see if they have opened. If so, remove from the pan onto the plate and spoon over the sauce, you can continue to reduce the sauce if you like.
Serve with the fries.
