Caramelised Onion and Blue Cheese Pasta

No words can describe the luxurious simplicity of this pasta dish. Well maybe 'high peasant' describes it perfectly. Simple flavours, cooked with extreme care.
There's nothing expensive about this dish, but when you have a mouthful, you'll be Gucci, trust me.
And you can use store bought pasta if you like, just make sure to buy Pappardelle.

Ingredients
180 g all purpose flour
20 g semolina
2 eggs *one egg per person
pinch of salt
50 g butter
3 large brown onions, sliced
balsamic vinegar
4 cloves of garlic (minced)
5 leaves of English spinach
75 ml prosecco
75 g of gorgonzola or good blue cheese
200 ml cream

Directions
For the fresh pasta
Weigh 100 g of flour per person (90 g all purpose, 10 g semolina) in this case 200 g total was used
Make a well out of flour on bench top and crack eggs inside
Gently mix egg mixture and slowly incorporate flour
Once incorporated knead for 15 minutes
Cover in cling and place in fridge for 1 hour
Set up pasta machine and when ready remove dough from fridge and divide in half
Using a rolling pin flatten out the dough
With machine on widest setting roll through
Fold dough over and repeat
Work dough through machine lowering the setting with each pass
Cut dough into desired widths
These were about 2.5 cm wide
For the Sauce
Cut onions length ways trying to get them as even as possible
Brown onions in a well oiled pan over medium heat
Generously salt onions
Once significantly reduced add balsamic and sugar to taste
Set aside
Deglaze same pan with prosecco
Add garlic and a generous amount of the butter
Once butter melted add cream and gorgonzola
Cook pasta in heavily salted water (will only take about 60 seconds to cook)
Once cooked add pasta directly to pan (do not drain)
Add onions back to pan with roughly chopped spinach
Leave on low heat until the pasta soaks up all the sauce
Plate up and enjoy
