Cacio e Pepe Toasty

All in all this toasty has four cheeses, a little crunch and a whole lot of “take my money” about this one.

Ingredients
4 pieces of white bread
100 g taleggio cheese
100 g mozzarella cheese
50 g parmesan, grated
50g pecorino romano, grated
Fresh cracked black pepper
500 g breadcrumbs
2 eggs
30 ml milk
canola oil for shallow frying
Directions
Whisk eggs and milk and set aside
Arrange taleggio, mozzarella and parmesan on two pieces of bread. Leaving a gap on the diagonal where the sandwich press with cut through the middle
Crack lots of black pepper on top of cheese and place another slice on top. Press down to create a little pocket of the cheese
Cook in sandwich press
Once cooked trim sandwich, dip in egg wash and then into breadcrumbs
Cook in canola oil 180 degrees C / 350 F until brown. Approx 45 seconds each side
Pat dry with a paper towel and top with pecorino romano.
